I hate when people complain about being too busy, but I'm going to do it anyway. When I sat down today to write this post, I was appalled that my last post was from exactly eight weeks ago. For this I am sorry. I've been busy. I'm not actually going to complain too much about it, as I've been having a great time soaking up the last moments of summer, but I will admit to neglecting this special space. What have my last two months looked like? Lots of time at our neighborhood pool, family vacation, hosting my future sister-in-law's bridal shower, and planning our upcoming trip to South Africa (yeah!). This schedule has also affected my weekly menu planning. While I still stuck to creating meal plans, they centered around quick salads and easy throw together concoctions (I'm looking at you Kirkland canned tuna), but this week is going to be different! I am finally cracking open cookbooks and revisiting favorite recipes.
