I am notorious for over booking myself. I say "yes" to just about everything because I truly enjoy staying engaged in my community and seeing my friends, but sometimes this means I don't get a single night to just go home after work. This coming week is one of those weeks, which means simple recipes will be key in making sure dinners happen.
Step 1: Community Supported Agriculture (CSA) Pick-Up
I think winter is finally finished here in DC, so over the next few weeks we should start seeing different items in the box, but this week we will be getting:
Step 2: Menu Creation
As I mentioned, it's a chaotic week, so I am sticking to recipes which can be prepped ahead of time, thrown together in under 20 minutes, or are ones which David feels comfortable to take the lead on (he will be making a few dinners this week so we don't end up eating at 10:00). Weeks like this also remind me that meals don't need to be extravagant; simple is often good enough.
* = A few weeks ago I started prepping roasted veggies for my weekday breakfasts, which almost always consists of two fried eggs over vegetables. By roasting ahead of time, I save a few minutes each morning.
** = I will be helping at cooking school Tuesday night, so won't be home, but this is a go-to, one-pan recipe, perfect for a busy week.
Step 3: Grocery Shopping
I normally do the shopping Saturday or Sunday early morning in order to beat the crowds, but this week I am going today (Friday) after work. Wish me luck.
