I hate when people complain about being too busy, but I'm going to do it anyway. When I sat down today to write this post, I was appalled that my last post was from exactly eight weeks ago. For this I am sorry. I've been busy. I'm not actually going to complain too much about it, as I've been having a great time soaking up the last moments of summer, but I will admit to neglecting this special space. What have my last two months looked like? Lots of time at our neighborhood pool, family vacation, hosting my future sister-in-law's bridal shower, and planning our upcoming trip to South Africa (yeah!). This schedule has also affected my weekly menu planning. While I still stuck to creating meal plans, they centered around quick salads and easy throw together concoctions (I'm looking at you Kirkland canned tuna), but this week is going to be different! I am finally cracking open cookbooks and revisiting favorite recipes.
Step 1: Recipe Browsing/Menu Creation
I can so easily get sucked into the black hole of Google, Pinterest, and my favorite recipe blogs searching for meal ideas, so I'm trying to work on getting this task done in under an hour. This week was a real success; I completed everything in 30 minutes.
* One of my new favorite go-to meals are the frozen Mahi Mahi burgers at Trader Joe's.
** I recently hosted a holiday dinner and discovered this Instant Pot coconut rice recipe, which has completely changed our kitchen for the better.
*** Right now I'm loving toasted pumpkin seeds, cut up orange pieces in my tuna.
Step 2: Grocery Shopping
All summer I've been taking advantage of our neighborhood farmer's market on Saturday morning. I buy as many of the fruits and vegetables on my list from there as I can. This week will be no different, especially the winter squash which always tastes so much better than anything I can find in the store.
